To Dairy or Not To Dairy...(pesto pasta salad)

I am hungry about every 2 hours, usually for ice cream. Sometimes the hunger feels insatiable and it can be rather frustrating, I am a 3 meal a day girl...not anymore. I have been giving in to my cravings, probably because I have an excuse, but also because there seems to be no other option. When an ice cream craving hits (usually prompted by Chopper mentioning ice cream- I think, to him, it seems like a magic trick. Mention it in passing and within 10 minutes we'll be eating it), I become like fiend, I need the fix.

Ice cream is not the only dairy I have been craving, and to be honest, dairy doesn't make me feel so hot. It's not a lactose thing, my stomach is fine, I just feel more sluggish, have more joint pain, and get more headaches when I eat a lot of it. These symptoms have lead me to my next kick...goats dairy!

Goats milk, yogurt, and cheeses are more easily absorbed into our systems, leaving less of a residue behind. Less residue means that people who have lactose issues, can sometimes eat goat dairy without trouble. It also means, less mucus and less headaches. It is possible to buy goats milk ice cream, but not on the island and not without paying a pretty penny ($7 a pint), however if you ever get the chance to try it, do.

Because goats are generally farmed on smaller farms (not in every case however), they are also less likely to have been treated with hormones, and anti-biotics, making goat's dairy a safer option as well.

I was really excited about the "cleanse pesto" I made because it not only was delicious and added lots of flavor, but it also had no dairy. I have made the pesto again since, and could have "legally" added parmesan, but now, why bother?

"Cleanse Pesto"

2 cloves garlic
1 whole bunch of basil
4-5 Tablespoons of flax oil (not cleansing? Use Olive oil, more affordable and delicious)
3 Tablespoons of lemon juice
3-4 Tablespoons of ground flax seed (not cleansing? You can use any nut, I like almonds in this recipe)
1/2 tsp Stevia (just to cut the acid a little)

Blend or food process garlic with oil.
Add basil process
add lemon juice, ground flax/nuts.
Blend till pesto consistancy.

Cleanse Pesto Pasta Salad (with goat cheese)

1 head broccoli
1 cup cherry tomatoes
1/4 cup pesto
2 cups cooked brown rice pasta (so good, best white pasta alternative)
1/4 cup chevre (soft goat cheese)

Boil the water for pasta, before adding pasta, blanch the broccoli for about 30 seconds (throw it in the hot water and quickly remove with a slotted spoon). Rinse the hot broccoli under cold water to stop the cooking process. Chop the broccoli and tomatoes.

Rinse the pasta under cold water once it is done cooking, mix with the vegetables, pesto, and goat cheese. Delicious!
